Easy Taco Mac
1 pound ground turkey or beef
1 (10 ounce) can Ro-Tel, undrained
1 cup broth (chicken or beef broth)
1 cup milk
1 (8 ounce) can tomato sauce
1 (1 ounce) package taco seasoning
1 1/2 cup elbow noodles
1 1/2 cup shredded cheddar cheese
In a large skillet, brown the ground turkey or ground beef over medium heat, drain off grease
Add the undrained can of Ro-Tel, broth, milk, tomato sauce and taco seasoning
Increase heat to medium high until the mixture begins to simmer
Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes
When noodles are tender, stir in shredded cheddar cheese
Thoughts
This was very quick and easy and I had the ingredients already so it was a win win. I used ground beef because although I love whole baked turkey but I’m not a fan of turkey lunch meat or ground turkey. Besides, the ground turkey I have is for making my dog Kaiyo’s food.
This was very good. I’ll be making it again!
Another yummy pantry meal. My husband loves this kind of dish on a cold winter’s night.

It was probably Johnny Marzetti, we love it more than this recipe. My mom also made this when I was growing up.

This sounds delish! I do love ground turkey, so I’d use that instead of ground beef. Kaiyo’s special dog food sounds good and healthy, too!

A good weeknight recipe- easy, tasty, and filling. Of course I’m vegan, but I can still recognize a good recipe when I see one.
My son and his family were vegetarians and then vegan for many years. He got into Jiu-Jitsu and started eating meat again. My granddaughter only eats chicken though.
