We’ve been eating a lot of soup as a quick meal. The potato soup this week was really good.

So glad more coworkers are coming in to lighten the workload! I envy your 60 degree temps. For some reason my area of Alabama seems to have forgotten we live in Alabama and is trying to give us real winter. I am not a fan. I hope you have a wonderful week!

My easy to go Winter meal is a kind of Chinese soup: water, I add garlic, pepper, turmeric, wide rice noodles, carrots, whatever greens I have (eg frozen green beans from our garden), veggie wonton, dried or fresh mushrooms, seaweed.
It doesn’t take long and warms you up!
I LOVE Chinese food! All of those ingredients sound good but I’m not a big fan of mushrooms although I will eat them mixed with other ingredients like this soup. Thanks for letting me know what you put in it!
