In The Kitchen…
I saw a recipe for Instant Pot Egg Salad that you don’t have to crack the eggs and thought I’d try it. I didn’t have a pan to fit in my Instant Pot so I ordered a Fat Daddio’s PRD-72 Round Cake Pan. It came yesterday so I’ll be trying the recipe soon.

New To Me Stuff:
I’m thinking about getting a Cold Brew Iced Coffee Maker, if you have one let me know what you think about it

  1. I love the elephant picture! Looking forward to that pound cake you plan to make, nothing, Iike a good pound cake.
    Have not seen any the TV shows you mentioned but let us know what is good!

  2. Your books sound good, though they are all new to me. I’ll be interested in seeing what you think.

    A cold brew iced coffee machine sounds great. Of course, with me, any sort of coffee is great. I’ve often thought about an espresso machine since I came back from Europe.

    I seem to gravitate to verses these days about fear. I have copied down lots of these into my journal to focus on.

    • With so many books that sound so good it’s very hard to decide which ones to read first!

      I keep favorite verses in a folder on my desktop.

  3. I love the sound of an instant pot egg salad! I love eggs, so I hope yours turns out OK. My OH wants a cold brew coffee machine, but has no idea which is worth buying as there are so many to choose from on Amazon, and the reviews are so mixed! xo

    • Hi Gemma! I’ll be posting the egg salad recipe and my review next Saturday. I chose that coffee maker because of the size and reviews.

  4. Happy Mother’s Day – After 8 weeks I’ve nearly given up on “waiting for” as we are still – closed for business here. I like iced coffee but just run it through the Keurig and add ice when I feel like one.

    • Happy Mother’s Day Diane! We’re still closed other than a few restaurants and they are having to space the tables out and limiting the number of people inside at one time. After I posted this I went back to Amazon and read more of the comments about the coffee maker. One person said he just makes coffee and then puts it in the fridge to get cold. Now I think I might try that before buying the Cold Brew Coffee Maker. I rarely drink hot coffee anymore other than maybe once in a great while in the morning or when I eat a muffin.

  5. Community looks like a good watch to me. I wish I had Hulu!! I live on the beach and we have been able to sneak on the beach at dusk and put our feet in. I do have a beach view from my balcony and I am so grateful for it. I haven’t attempted to bake in my Instant Pot, but it’s something I’ve been meaning to try. I did buy the pan so I just need to do it! Thank you for sharing the inspiring verse,

    • Happy Mother’s Day Kathy! I’m sure when the restaurants open back up people will be flocking to them, so I’ll wait until things settle down and I feel comfortable going.

  10. Happy Mother’s Day, Vicki. I love cold brew coffee. I occasionally buy the Starbucks cold brew mix at my grocery store. Very easy to make and lasts up to a week in the fridge. Otherwise I do what others mentioned – make a cup in the Keurig and then cool in the fridge.

    • I think I’ll try making it in the Keurig first since I have 2 of them. That does make more sense. I was looking around on Amazon and saw the coffee maker. I didn’t even know they were a thing, but I thought “Oh, that’s neat!”. I’m tired of paying $6 for 4 bottles of Starbucks cold coffee. It adds up as much as I drink.

  11. I so miss eating at a restaurant. Getting takeout and eating at home just doesn’t feel the same.

    That egg salad sounds great! I usually boil eggs in the instant pot but have to now try making a salad in it.

I miss restaurants (and my hair salon) but am not in a hurry to return. Some restaurants have reopened, but the servers aren’t wearing masks at all of them! Have a good week, Vicki!

    • I finished the Taylor audio and will be reviewing it later day.

      I don’t understand why people would be out in public without a mask! I carry masks, wipes, gloves, and hand sanitizer with me everywhere I go.

      I rarely ever in my life got a haircut. I’ve had perms, colored it etc. but only got it cut a few times. About 6 months ago I decided to get it cut so I wouldn’t have to keep putting it in a twisty for work. I loved it and decided it was time to go get it cut again. Before I even made an appointment they closed everything and here I sit with hair that’s too longs and I’m putting it in a twisty again. I can’t wait to be able to go get it cut!

    • Thanks Susan! I tried to remember where I took the photo of the elephant but I’m not sure. I think it was at Disney World. I’m hoping things go back to normal soon.

  15. I have downloaded some classics from Amazon and hope to read them alternately with my current books. Have been meaning to do so for a long time never got around to doing it. now seems a good time.

    • I’m so bad about buying books and then taking forever to listen or read them. So many books catch my eye that I get sidetracked.

  16. Hope you had a great Mother’s Day. Our Chinese restaurant finally opened for take out so ordered to support them! Delicious. I think I should have requests Feel Like Falling an audio, wonder if I still can? I haven’t watched any of the programs you are considering so I am no help. Looking forward to being able to lunch with friends. Eating while on zoom just is not the same.

    • I did have a great Mother’s Day, thank you. I hope you did too! I wish our Chinese restaurant would open, it’s one of my favorites! FLF was great on audio. I think the print would be too, the story was so good!

  17. I haven’t watched the Fargo TV show, but I remember really liking the movie so that’s the one I vote for.

    • I either wasn’t in the mood for it when I watched the movie or something because I didn’t like it much. I’ve been meaning to re-watch it for a really long time so I think I will before I watch the show.

  19. A bit belated but Happy Mother’s Day! We didn’t go out to eat a whole lot but I’m seriously missing that now… especially when it comes to food we don’t know how to cook! And, of course miss going out to eat with friends. I feel like we’ll never get back to that. Thank you for linking the egg recipe. I love eggs and will have to try that. Let us know what you decide on the cold brew coffee maker. Now that we’re definitely getting a lot warmer over here I’m curious about that!

    • We didn’t go out to eat very often either, but now that we can’t I realize how much I did enjoy it. I think I might just try what someone on a question board about cold brew coffee makers suggested and make it in my Keurig and then just put in my fridge to get cold. That way I can use up the K-cups I have left from a huge box I bought at Costco. I might still get the coffee maker later though.

    My BFF brews her coffee double strength and then pops it into the fridge to make iced coffee (with unsweetned vanilla almond milk). I’m going to try it this summer.

  22. That instant pot egg salad is wild. I hate cracking hard boiled eggs because the shells always take half the whites away when I peel them.

    We drove by the beach this past weekend. We took Pacific Coast Hwy and went past many beaches and sooooo many people were milling about even though the actual beaches were closed. I want to eat a nice dinner in a restaurant but not while behind plexiglass so I will be waiting for awhile.

    • I hate cracking hard boiled eggs too. If you own an Instant Pot you can do the 5-5-5 method and then put the eggs in cold water to cool. The shells practically fall off. But I’m going to try this and then can skip the peeling step. I’ll just have to chop the loaf up and add mayo etc.

  25. I’m not sure I’ve ever really had egg salad but I know so many people who love it. I’m intrigued about the instant pot recipe. I keep toying with the idea of getting one but my grandmother terrified me about pressure cookers and I haven’t quite gotten over that! And now I want an iced coffee machine! That sounds like perfection. Hope you are having a great week!
