Quinoa Pizza Bites

Makes: ~40 bites

Ingredients:
2 cups cooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 tsp minced garlic
1/2 cup fresh basil, chopped
1 cup chopped pepperoni slices (~1/2 of a 7 oz bag)
1/2 tsp seasoning salt
1 tsp paprika
1 tsp dried crushed oregano
pizza sauce for dipping

Directions:
Preheat oven to 350 degrees.
Mix together all ingredients, except pizza sauce, in a medium mixing bowl.

Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.

Bake for 15-20 minutes.

These were YUMMY and very quick and easy, which I love! I didn’t have any fresh basil so I used 1/4 tsp. dried. You could taste the basil but it wasn’t overpowering. I loved the smell of the quinoa while it was cooking. Plus I already loved all the other ingredients so I was so sure I’d love them. My husband on the other hand was a toss up, but when he tasted them he said they were really good!  I will definitely be making them again. Next time I’m going to use turkey pepperoni, I just couldn’t find any this time. I did find some mini pepperoni, so I used them and didn’t have to cut them up. Plus, I notice I forgot to put the garlic in the photo.
